Step-by-Step Instructions
  1. In a medium saucepan, bring beef broth, butter, salt, garlic powder, and smoked paprika to a boil. Add the rice, reduce heat, cover and simmer for 15-18 minutes until fluffy.
  2. Season steak with salt, black pepper, garlic powder, paprika, and cumin. Heat olive oil in a skillet, sear steak for 3-4 minutes on each side. Rest and slice into strips.
  3. In a small saucepan, heat heavy cream over low heat. Add cream cheese and stir until smooth. Gradually mix in cheddar and Monterey Jack cheeses until melted.
  4. In bowls, add rice, top with sliced steak, and drizzle with queso sauce. Add optional toppings and serve immediately.
