- In a medium saucepan, bring beef broth, butter, salt, garlic powder, and smoked paprika to a boil. Add the rice, reduce heat, cover and simmer for 15-18 minutes until fluffy.
- Season steak with salt, black pepper, garlic powder, paprika, and cumin. Heat olive oil in a skillet, sear steak for 3-4 minutes on each side. Rest and slice into strips.
- In a small saucepan, heat heavy cream over low heat. Add cream cheese and stir until smooth. Gradually mix in cheddar and Monterey Jack cheeses until melted.
- In bowls, add rice, top with sliced steak, and drizzle with queso sauce. Add optional toppings and serve immediately.
