Preparation Steps
  1. In a mixing bowl, combine 8 ounces of softened cream cheese, ½ cup of Greek yogurt, and ½ cup of almond flour. Blend until smooth and creamy, about 2-3 minutes.
  2. Add ⅓ cup of erythritol or stevia and 1 teaspoon of vanilla extract to your cheesecake base. Mix for an additional 1-2 minutes.
  3. Chop ½ cup of fresh strawberries and gently fold them into the cheesecake mixture.
  4. Using a tablespoon or small ice cream scoop, portion the mixture onto a parchment-lined baking sheet and shape into 1-inch diameter balls.
  5. Place the tray in the freezer for approximately 30-45 minutes.
  6. (Optional) Melt 1 cup of sugar-free dark chocolate or prepare coconut flakes. Dip or roll the fat bombs in the chocolate or coconut.
  7. Transfer the Strawberry Cheesecake Fat Bombs back to the freezer or store in an airtight container in the fridge.
