Step-by-Step Instructions for Tomato Jam
  1. Begin by roughly chopping 4 lbs. of ripe tomatoes and 1 yellow onion. Place these chopped ingredients into a large stock pot.
  2. Add all remaining ingredients to the pot and stir the mixture well to ensure even distribution.
  3. Place the pot over medium heat and bring the mixture to a gentle boil, stirring occasionally.
  4. Once boiling, reduce heat to low and allow to simmer uncovered for 2.5 to 3 hours, stirring occasionally.
  5. Check the consistency of your Tomato Jam; it should be rich and thick, clinging to the back of a spoon.
  6. Remove the pot from heat and let the jam cool a few minutes before transferring to airtight containers.
