  • 1 medium Cucumber or shredded carrots/steamed broccoli
  • 1 cup Edamame or peas/chickpeas
For Serving
  • 2 tablespoons Sriracha mayo regular mayo mixed with sriracha

Step-by-Step Instructions
  1. Prepare the Salmon: Cut salmon fillets into 1-inch cubes, removing the skin if desired. Place in a medium bowl.
  2. Whisk the Marinade: In a separate bowl, whisk together soy sauce, honey, sriracha, minced garlic, and water until smooth.
  3. Marinate the Salmon: Pour marinade over salmon cubes, ensuring they are well coated. Allow to marinate for at least 20 minutes.
  4. Heat the Skillet: Heat 2 tablespoons of oil in a large non-stick skillet over medium-high heat. Add marinated salmon cubes and cook for 2-3 minutes on each side.
  5. Finish the Sauce: Pour remaining marinade into skillet, simmer for another 2-3 minutes until thickened.
  6. Prepare the Bowls: Place a helping of cooked rice at the bottom of each bowl.
  7. Assemble the Bowls: Spoon the salmon over the rice and add avocado, cucumber, and edamame.
  8. Drizzle and Serve: Drizzle with sriracha mayo and garnish with sesame seeds or red pepper flakes.
