For the Bowl Assembly
  • 2 cups Cooked white or brown rice Quinoa or cauliflower rice for lower-carb option.
  • 1 each Avocado, sliced Guacamole can be a delightful alternative.
  • 1 cup Cherry tomatoes, halved You may substitute with diced bell peppers.
  • 1 cup Corn kernels Frozen corn is a handy option.
  • ½ each Red onion, thinly sliced Scallions can be substituted.
  • ¼ cup Fresh cilantro, chopped Parsley can be used as an alternative.
Optional Toppings
  • ½ cup Greek yogurt or sour cream Vegan yogurt is a substitute.
  • to taste Chili flakes Fresh jalapeños can be used for heat.

Method
 

Directions
  1. Whisk together honey, lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and black pepper in a medium bowl to prepare the marinade.
  2. Marinate the chicken in the mixture for 10–15 minutes, ensuring it is evenly coated.
  3. Heat a nonstick skillet over medium heat and cook marinated chicken for 5–7 minutes each side until golden brown and fully cooked.
  4. Slice the rested chicken into strips.
  5. Spoon warm rice into bowls as a base.
  6. Layer the sliced chicken, avocado, cherry tomatoes, corn, and red onion on top of the rice.
  7. Garnish with cilantro, drizzle with yogurt or sour cream, and sprinkle with chili flakes.
