Method
 

Preparation Steps
  1. Rinse the long-grain rice under cold water until the water runs clear. Combine rinsed rice with 2 cups of water and a pinch of salt in a medium saucepan. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef or turkey, breaking it apart. Cook for 5-7 minutes until browned.
  3. Once cooked, add taco seasoning and 1/4 cup of water to the meat. Stir and simmer for 2-3 minutes.
  4. Stir in drained black beans and corn, cooking for an additional 3-5 minutes.
  5. Pour in salsa and mix well, cooking for another 2-3 minutes.
  6. Divide the cooked rice into serving bowls and top with the meat mixture.
  7. Add shredded cheddar cheese, diced cherry tomatoes, avocado slices, and garnish with green onions and cilantro.
  8. Season with salt and pepper to taste and serve warm.
