Preparation Steps
- Rinse the long-grain rice under cold water until the water runs clear. Combine rinsed rice with 2 cups of water and a pinch of salt in a medium saucepan. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes.
- Heat olive oil in a large skillet over medium heat. Add ground beef or turkey, breaking it apart. Cook for 5-7 minutes until browned.
- Once cooked, add taco seasoning and 1/4 cup of water to the meat. Stir and simmer for 2-3 minutes.
- Stir in drained black beans and corn, cooking for an additional 3-5 minutes.
- Pour in salsa and mix well, cooking for another 2-3 minutes.
- Divide the cooked rice into serving bowls and top with the meat mixture.
- Add shredded cheddar cheese, diced cherry tomatoes, avocado slices, and garnish with green onions and cilantro.
- Season with salt and pepper to taste and serve warm.
