Ingredients
  

For the Meatballs
  • 1 lb Ground Chicken
  • 1/2 cup Breadcrumbs
  • 1/4 cup Fresh Cilantro chopped
  • 2 tablespoons Green Onions sliced
  • 1 large Egg
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Fish Sauce
  • 1/2 teaspoon Red Pepper Flakes to taste
For the Coconut Curry Sauce
  • 2 tablespoons Vegetable Oil
  • 1 medium Onion diced
  • 2 tablespoons Red Curry Paste
  • 1 can Coconut Milk
  • 2 tablespoons Lime Juice
  • 1 tablespoon Brown Sugar
  • 1 cup Chicken Broth
For Serving
  • 1/4 cup Fresh Cilantro for garnish
  • 2 cups Cooked Jasmine Rice

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, chopped cilantro, green onions, egg, garlic, ginger, soy sauce, fish sauce, red pepper flakes, salt, and pepper.
  3. Form the mixture into small meatballs, about 1 inch in diameter, and place on the baking sheet.
  4. Bake the meatballs for 18–20 minutes, checking for doneness at 165°F (74°C).
  5. While the meatballs bake, heat vegetable oil in a skillet; sauté onion for 3–4 minutes until translucent.
  6. Add garlic, ginger, and red curry paste; cook for an additional 2 minutes.
  7. Pour in coconut milk, fish sauce, lime juice, brown sugar, and chicken broth; bring to simmer.
  8. Combine baked meatballs with the coconut curry sauce and let simmer together for 5–7 minutes.
  9. Serve the meatballs over jasmine rice garnished with cilantro.
