  • 1 clove Garlic freshly grated
  • ¼ cup Cilantro fresh, for garnish
For the Dressing
  • 3 tablespoons Rice Vinegar can substitute with apple cider vinegar
  • 2 tablespoons Fresh Lime Juice
  • 1 teaspoon Sambal can substitute with red pepper flakes
  • 1 tablespoon Toasted Sesame Oil use toasted for best flavor
  • 1 tablespoon Monk Fruit or Allulose keto-friendly sweetener
  • 1 teaspoon Salt adjust to taste
For the Garnish
  • 2 tablespoons Sesame Seeds can be omitted or replaced with chopped nuts

Method
 

Directions
  1. Wash and dry the cucumbers thoroughly, then slice them on the bias into approximately ¼-inch thick pieces.
  2. In a small bowl, combine rice vinegar, grated garlic, lime juice, sambal, salt, toasted sesame oil, and monk fruit sweetener. Whisk until well mixed.
  3. In a large bowl, add sliced cucumbers, red onions, chopped peanuts, sesame seeds, and cilantro. Toss gently to combine.
  4. Pour the dressing over the cucumber mixture and toss again to ensure even coating.
  5. Cover and let the salad rest at room temperature for about 30 minutes.
  6. Serve immediately as a refreshing side dish or refrigerate to serve later.
