- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Melt unsalted butter in a medium saucepan over low heat, then stir in brown sugar until the mixture bubbles and turns smooth.
- Remove from heat and stir in vanilla extract and a pinch of salt.
- Pour the butter mixture over the Chex cereal in a large mixing bowl and fold gently to coat.
- Transfer the coated Chex onto the prepared baking sheet and bake for about 15 minutes, stirring halfway through.
- Let the Toffee Chex Mix cool completely on the baking sheet.
