Method

Step-by-Step Instructions
  1. Prepare the Marinade: In a mixing bowl, whisk together the freshly grated ginger, minced garlic, soy sauces, coconut milk, brown sugar, fresh lime juice, salt, and pepper until smooth.
  2. Marinate the Chicken: Cut the chicken into bite-sized chunks and coat them thoroughly in the marinade. Cover and refrigerate for at least 30 minutes and up to 4 hours.
  3. Assemble the Skewers: Thread the marinated chicken pieces onto the soaked skewers with spaces in between for even cooking.
  4. Preheat the Grill: Prepare your grill by preheating it to medium-high heat, around 200°C (400°F). Lightly oil the grates.
  5. Grill the Skewers: Cook the skewers on the preheated grill for 4-5 minutes on each side until the chicken reaches an internal temperature of 74°C (165°F).
  6. Serve and Enjoy: Remove the skewers from the grill, allow to rest, squeeze fresh lime juice over, and serve with preferred sides.
