Ingredients
  

For the Shrimp
  • 1 pound large raw shrimp Pat dry and season
  • 1 tablespoon olive oil For grilling
For the Bowl Base
  • 2 cups rice or quinoa Cooked according to package instructions
For the Avocado
  • 2 avocados Sliced
For the Mango Salsa
  • 1 mango Diced
  • 0.25 cup red onion Finely chopped
  • 1 jalapeño Diced (if using)
  • 2 tablespoons lime juice Freshly squeezed
  • 0.5 cup cilantro Chopped
  • 1 pinch salt
For the Lime-Chili Sauce
  • 0.5 cup Greek yogurt Can substitute with dairy-free yogurt
  • 2 tablespoons mayonnaise Optional
  • 1 teaspoon chili powder
  • 1 lime Zest and juice
  • 1 tablespoon honey Can substitute with maple syrup

Method
 

Preparation Steps
  1. Combine diced mango, finely chopped red onion, diced jalapeño, lime juice, chopped cilantro, and salt in a mixing bowl. Mix well and let chill for at least 15 minutes.
  2. Whisk together Greek yogurt, mayonnaise, chili powder, lime zest and juice, and honey in a separate bowl. Season with salt and pepper to taste.
  3. Pat dry shrimp and season with chili powder, garlic powder (if using), and salt and pepper. Heat a grill pan, add olive oil, and grill shrimp for 2-3 minutes per side until pink.
  4. Cook rice or quinoa according to package instructions. Fluff with a fork and divide into bowls. Top with grilled shrimp and sliced avocado.
  5. Spoon mango salsa over bowls and drizzle with lime-chili sauce. Garnish with chopped cilantro and serve with lime wedges.
