  • 4 cups Bread Flour Can be replaced with all-purpose flour
  • 2 teaspoons Instant Yeast Can use active dry yeast
  • 1 tablespoon Sugar Can be omitted
  • 2 teaspoons Kosher Salt Sea salt is a substitute
  • 1/4 cup Olive Oil Any neutral oil can be used
  • 1.5 cups Warm Water 105-110ºF
  • 1/4 cup Warm Milk Optional ingredient
  • 1 large Egg Beaten, for egg wash
  • 1 tablespoon Water For egg wash
Filling Ingredients
  • 2 cups Cheeses (Kesar Akkawi or Mozzarella) Can be swapped with your favorite cheese
  • 1 cup Sucuk Replace with cooked sausage or omit
  • 1 pound Prepared Meat Filling Customizable with veggies or plant-based proteins

Method
 

Dough Preparation
  1. In a large mixing bowl, combine bread flour, instant yeast, sugar, and kosher salt.
  2. Gradually incorporate olive oil, followed by warm water and optional warm milk.
  3. Knead the mixture for 8-10 minutes until smooth and elastic.
Dough Rising
  1. Shape the dough into a ball and place it in a lightly oiled bowl.
  2. Cover with a warm, damp cloth and let it rise for 60-90 minutes.
Oven Preparation
  1. Preheat your oven to 500ºF (260ºC) about 15 minutes before the dough finishes rising.
Shaping Flatbread
  1. Once the dough has doubled, punch it down and divide into portions.
  2. Shape each piece into an oval about 1/4 inch thick.
Filling Flatbread
  1. Create an indentation in the center of each oval and fill with cheese, meat, or vegetables.
Baking Preparation
  1. Brush the edges of each pide with the egg wash.
  2. Sprinkle sesame or nigella seeds if desired.
Baking
  1. Transfer the pides onto the preheated pizza stone or in the oven.
  2. Bake for 14-17 minutes until golden.
Cooling
  1. Let the baked flatbread cool slightly on a wire rack before serving.
