For the Teriyaki Chicken Yaki Udon
  • 8 ounces Udon Noodles Can be swapped with ramen or rice noodles
  • 2 stalks Green Onions Adjust based on personal taste
  • 2 tablespoons Sesame Oil Can substitute with olive oil
  • 2 tablespoons Soy Sauce Use low-sodium if preferred
  • 1 tablespoon Mirin or Rice Vinegar White wine or cider vinegar can be substitutes
For Garnishing
  • 1 tablespoon Sesame Seeds Sprinkle generously for extra flavor
  • 2 stalks Extra Green Onions Freshly sliced for topping

Method
 

Step-by-Step Instructions
  1. Bring a pot of water to a boil and cook the udon noodles according to package instructions, usually around 6-8 minutes. Drain and rinse under cold water to stop cooking.
  2. Heat a large non-stick skillet over medium-high heat, add sesame oil, and once shimmering, add bite-sized chicken pieces. Cook for about 5-7 minutes until browned and cooked through.
  3. Pour teriyaki sauce into the skillet and simmer for another 2-3 minutes until thickened and coats the chicken.
  4. Reduce heat to medium, add cooked udon noodles, and gently toss everything together for about 2 minutes.
  5. Prepare bowls with cooked rice at the bottom and spoon over the teriyaki chicken and noodle mixture.
  6. Garnish with sliced green onions and sesame seeds before serving.
