Step-by-Step Instructions
  1. Preheat your oven to 200°C (392°F) and bake whole sweet potatoes for about 40 minutes or until fork-tender.
  2. Once cooked, let them cool until manageable, then peel off the skin.
  3. Mash the sweet potatoes in a large bowl until creamy and smooth.
  4. Gradually add the flour to the mashed sweet potatoes, stirring to combine until a soft dough forms.
  5. Divide the dough into equal-sized balls and flatten each ball between two sheets of parchment paper into thin circles.
  6. Heat a non-stick pan over medium heat and place the first tortilla in the pan, cooking each side for about 1-2 minutes.
  7. Once cooked, stack the tortillas on a plate and cover with a kitchen towel to keep warm and flexible.
