Preparation Steps
- Gather all fresh ingredients and wash and dry the cucumbers thoroughly.
- In a mixing bowl, combine granulated white sugar, sesame seeds, crushed garlic, and chopped green onions.
- Add soy sauce or coconut aminos, rice vinegar, Chinese chili oil, and sesame oil to the bowl and whisk for about 30 seconds.
- Trim both ends of the cucumbers and create accordion cuts using chopsticks.
- Place cucumber pieces in the bowl, sprinkle with salt, and massage for about 1-2 minutes.
- Let the cucumbers sit for 8-10 minutes to lose excess moisture.
- Rinse the salted cucumbers under cold water and pat dry.
- Pour dressing over cucumbers, toss gently, and chill in the refrigerator for at least 10 minutes before serving.
