Method
 

Preparation Steps
  1. Gather all fresh ingredients and wash and dry the cucumbers thoroughly.
  2. In a mixing bowl, combine granulated white sugar, sesame seeds, crushed garlic, and chopped green onions.
  3. Add soy sauce or coconut aminos, rice vinegar, Chinese chili oil, and sesame oil to the bowl and whisk for about 30 seconds.
  4. Trim both ends of the cucumbers and create accordion cuts using chopsticks.
  5. Place cucumber pieces in the bowl, sprinkle with salt, and massage for about 1-2 minutes.
  6. Let the cucumbers sit for 8-10 minutes to lose excess moisture.
  7. Rinse the salted cucumbers under cold water and pat dry.
  8. Pour dressing over cucumbers, toss gently, and chill in the refrigerator for at least 10 minutes before serving.
