Making the Flatbread
- Start by placing the cottage cheese, eggs, garlic powder, salt, black pepper, and Italian herb mix in a blender. Blend the ingredients on high until the mixture is completely smooth, which will take about 1-2 minutes.
- Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Pour the blended cottage cheese mixture onto the prepared baking sheet. Use a spatula to spread the batter evenly, shaping it into a thin circle about 10 inches wide.
- Place the baking sheet in the preheated oven and bake for 30 minutes, looking for a golden brown color.
- Carefully remove the flatbread from the oven and raise the temperature to 400°F (200°C).
- Spread your favorite pizza sauce evenly over the baked flatbread. Add a generous layer of grated cheese on top, then arrange pepperoni slices or chosen toppings.
- Return the assembled flatbread pizza to the oven for an additional 8-10 minutes until the cheese is melted and bubbly.
- Remove from the oven and let cool for a couple of minutes before slicing and serving hot.
