- In a food processor, blend the ricotta, cream cheese, and vanilla bean paste until the mixture is light and fluffy, about 30 seconds to 1 minute. Transfer into a piping bag.
- Preheat your broiler to medium heat. Slice the croissants in half and toast them cut-side up for about 2-3 minutes until golden brown.
- Arrange the toasted croissant halves on individual plates. Pipe a decorative swirl of whipped ricotta on each croissant.
- In a small saucepan, melt unsalted butter over medium heat. Add honey and let bubble for about 2-3 minutes until deep amber.
- Remove the honey mixture from heat and let it cool for about a minute. Drizzle over the whipped ricotta on the croissants.
