Ingredients
  

For the Fish
  • 1 pound Cod Fillet skinless works best
  • 2 tablespoons Oil for marinating and cooking
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Paprika smoked paprika for richer taste
  • 1/2 teaspoon Cayenne Pepper adjust for heat preference
  • 1 teaspoon Ground Cumin or chili powder as substitute
  • 1 teaspoon Salt sea salt recommended
For the Sauce
  • 1/2 cup Greek Yogurt can swap with sour cream
  • 2 tablespoons Mayonnaise avocado or plant-based mayo as alternatives
For the Slaw
  • 2 cups Purple Cabbage shredded
  • 1 cup Carrots shredded
  • 1 cup Frozen Corn thaw beforehand
  • 1 small Jalapenos chopped
  • 1/4 cup Cilantro chopped
For Serving
  • 6-8 pieces Corn Tortillas flour tortillas can be an alternative

Method
 

Preparation Steps
  1. Marinate the fish in a mixture of oil, lemon juice, paprika, cayenne, cumin, and salt for at least 30 minutes.
  2. Combine slaw ingredients in a bowl and mix Greek yogurt dressing separately. Toss and refrigerate.
  3. Whisk together Greek yogurt, mayonnaise, lemon juice, paprika, and salt to make the sauce.
  4. Cook marinated cod in a skillet for 3-5 minutes per side until opaque. Break it into pieces.
  5. Char corn tortillas, add cod, top with slaw, drizzle sauce, garnish with jalapenos and cilantro.
  6. Serve immediately with lime wedges and sides.
