- Preheat your oven to 425°F (220°C).
- In a baking dish, place the tomatillos, quartered onion, and unpeeled garlic cloves. Optionally, add whole jalapeños.
- Roast the vegetables in the preheated oven for 15-20 minutes.
- Allow the vegetables to cool for about 5 minutes. Then, peel the roasted garlic cloves.
- In a blender, combine the roasted tomatillos, onion, peeled garlic, optional jalapeños, fresh cilantro, and lime juice. Blend until smooth.
- Taste your salsa and add salt to taste. Optionally drizzle in olive oil and blend again.
- Transfer the salsa to a serving bowl. Enjoy immediately or chill in the refrigerator for at least an hour.
