Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a baking dish, place the tomatillos, quartered onion, and unpeeled garlic cloves. Optionally, add whole jalapeños.
  3. Roast the vegetables in the preheated oven for 15-20 minutes.
  4. Allow the vegetables to cool for about 5 minutes. Then, peel the roasted garlic cloves.
  5. In a blender, combine the roasted tomatillos, onion, peeled garlic, optional jalapeños, fresh cilantro, and lime juice. Blend until smooth.
  6. Taste your salsa and add salt to taste. Optionally drizzle in olive oil and blend again.
  7. Transfer the salsa to a serving bowl. Enjoy immediately or chill in the refrigerator for at least an hour.
