Chutney Base
  • 500 grams Cherry Tomatoes Regular ripe tomatoes can be substituted
  • 150 grams Caster Sugar Granulated sugar can be an alternative
  • 150 ml White Vinegar Apple cider vinegar can be substituted
  • 50 ml Lemon Juice Fresh lemon juice is best
Spice Blend
  • 4 pcs Red Chillies Remove seeds for a milder chutney
  • 2 tsp Ginger (peeled and finely chopped) Ground ginger can be used in emergencies
  • 4 cloves Garlic (crushed) Garlic powder is a quick alternative
  • 1 tsp Salt Himalayan pink salt or sea salt are substitutes

Method
 

Preparation Steps
  1. In a heavy-bottomed saucepan, combine halved cherry tomatoes, caster sugar, white vinegar, lemon juice, salt, chopped red chillies, crushed garlic, and finely chopped ginger. Stir the mixture over low heat for about 5 minutes.
  2. Once the sugar has dissolved, increase the heat to high, bringing the chutney to a gentle simmer for about 10 minutes.
  3. Reduce the heat to medium, allowing the chutney to simmer for approximately 30 minutes, or until thickened to your preference.
  4. As the chutney cooks down, ensure your jars are sterilized by placing them in a preheated oven at 180°C (350°F) for 10-15 minutes.
  5. Spoon the hot Spicy Tomato and Chilli Chutney into the prepared sterilized jars, filling them almost to the top.
  6. Allow the jars to cool completely at room temperature before storing.
  7. For the best flavor, let your chutney mature for about 4-6 weeks before using.
